    Make the Caramelle Filling

    In a mixing bowl, combine the ricotta cheese, grated Parmesan, egg yolk, salt, and black pepper. Mix until smooth.

    Fill the Pasta

    Cut the fresh pasta sheets into squares about 10cm x 10cm. Place a teaspoon of the filling in the center of each square. Fold the pasta over to form a triangle, pressing the edges to seal. Then, twist the two pointed ends together to form a caramelle shape.

    Cook the Caramelle

    Bring a large pot of salted water to a boil. Gently add the caramelle and cook for about 3-4 minutes until they float to the top. Remove and drain.

    Prepare the Marsala Mushroom Sauce

    In a skillet, heat the olive oil over medium heat. Add the shallots and sauté until translucent. Add the sliced mushrooms and cook until they are browned and tender.

    Finish the Sauce

    Pour in the Marsala wine and let it simmer until reduced by half. Stir in the heavy cream and thyme, season with salt and pepper to taste.

    Combine and Serve

    Gently toss the cooked caramelle in the Marsala mushroom sauce. Serve immediately, garnished with extra Parmesan if desired.
