Prepare the Broth
In a saucepan, heat the chicken or vegetable broth over medium heat. Add the saffron threads to the broth and let it steep while you prepare the risotto.

In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent, about 3-4 minutes.

Deglaze with Wine
Pour in the dry white wine and stir continuously until the wine has mostly evaporated.

Begin adding the warm saffron-infused broth to the rice, one ladle at a time. Stir frequently and wait until the liquid is absorbed before adding the next ladle of broth. Repeat this process for about 18-20 minutes until the rice is creamy and al dente.
