Pork Roast
Method
Cooking Instructions
- 1
Prepare the Marinade
In a bowl, mix olive oil, minced garlic, chopped rosemary, salt, and black pepper. Rub this mixture all over the pork shoulder, ensuring it is well coated. Cover and marinate in the refrigerator for at least 2 hours or overnight for best results.
- 2
Preheat the Oven
Preheat your oven to 325°F (165°C).
- 3
Sear the Pork
In a large oven-safe skillet, heat a little olive oil over medium-high heat. Sear the marinated pork shoulder on all sides until browned, about 4-5 minutes per side.
- 4
Roast the Pork
Add the chicken broth to the skillet and cover with a lid or foil. Place the skillet in the preheated oven and roast for about 3-4 hours, or until the pork is tender and easily pulls apart.
- 5
Make the Natural Jus
Once the pork is done, remove it from the oven and let it rest for 15 minutes. Meanwhile, place the skillet with the remaining juices on the stove over medium heat and reduce it slightly to create a natural jus.
