    Prepare the Roast

    Preheat your oven to 325°F (165°C). Season the beef chuck roast with salt, black pepper, garlic powder, and onion powder on all sides.

    Sear the Meat

    In a large oven-safe pot, heat the vegetable oil over medium-high heat. Once hot, add the roast and sear on all sides until browned, about 3-4 minutes per side. Remove the roast and set aside.

    Add Vegetables

    In the same pot, add the chopped carrots, quartered potatoes, and quartered onion. Sauté for 3-4 minutes until slightly softened.

    Combine Ingredients

    Return the roast to the pot. Add the beef broth, thyme, and bay leaves. Bring to a simmer.

    Bake the Roast

    Cover the pot with a lid and transfer it to the preheated oven. Bake for 3-4 hours, or until the meat is tender and easily shreds with a fork.

    Serve

    Remove the pot from the oven and let the roast rest for 10 minutes. Carve and serve with the vegetables and gravy made from the cooking juices.
