Cooking Instructions
- 1
Cook the Spaghetti
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.
- 2
Prepare the Pancetta
In a large skillet over medium heat, add the pancetta and cook until crispy, about 5-7 minutes. Remove from heat.
- 3
Mix the Sauce
In a bowl, whisk together the eggs, grated Parmesan cheese, and black pepper until well combined.
- 4
Combine Spaghetti and Sauce
Add the hot spaghetti to the skillet with pancetta (off the heat). Quickly pour the egg and cheese mixture over the spaghetti, tossing rapidly to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.
- 5
Serve
Serve immediately with additional Parmesan cheese and black pepper on top.
