Prepare the Eggplant
Slice the eggplants into 1/2 inch thick rounds. Sprinkle both sides with salt and let them sit for about 30 minutes to draw out excess moisture. Rinse and pat dry.

Fry the Eggplant
In a large skillet over medium heat, heat olive oil. Fry the eggplant slices for about 3-4 minutes on each side until golden brown. Drain on paper towels to remove excess oil.

Layer the Eggplant Parmesan
Preheat your oven to 375°F (190°C). In a baking dish, spread a thin layer of marinara sauce at the bottom. Layer fried eggplant slices, followed by marinara sauce, mozzarella cheese, and a sprinkle of Parmesan cheese. Repeat layers until all ingredients are used, finishing with marinara sauce and a generous topping of mozzarella and Parmesan cheese.

Add Breadcrumbs
Sprinkle breadcrumbs evenly over the top layer of cheese.

Garnish and Serve
Remove from oven, let it sit for 10 minutes, garnish with fresh or dried basil, and serve with extra marinara sauce on the side.
