1. Prepare the Chicken
Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and pepper on both sides. Dredge each breast in flour, dip in beaten eggs, and then coat with bread crumbs.
2. Cook the Chicken
In a large skillet, heat the olive oil over medium heat. Add the breaded chicken and cook for about 5-7 minutes on each side, or until golden brown and cooked through. Transfer to a baking dish and place in the oven to keep warm.
3. Prepare the Sauce
In the same skillet, add the mushrooms and sauté until they are tender, about 5 minutes. Add the white wine and lemon juice, scraping any browned bits from the bottom of the skillet. Stir in the butter until melted and the sauce has thickened slightly.
4. Serve
Pour the mushroom sauce over the warm chicken breasts and garnish with chopped parsley before serving.
