Potato Preparation

    Initial Boil

    Peel and cut the russet potatoes into 1-inch cubes. Boil them in salted water until just tender, about 10 minutes. Drain and let them cool.

    Heat vegetable oil in a deep pot. Fry the boiled potatoes at 350°F (175°C) until golden brown, about 5-7 minutes. Remove them and drain on paper towels.

    Second Fry

    Allow the potatoes to cool completely, then fry them again for 5 minutes until crispy. Drain on paper towels and season with salt.

Smoked Tomato Sauce

    Prepare Sauce

    In a saucepan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant. Add cherry tomatoes, smoked paprika, salt, and black pepper. Cook until tomatoes break down, about 15 minutes. Blend until smooth.

Saffron Aioli

    Make Aioli

    In a bowl, combine mayonnaise, saffron threads, lemon juice, minced garlic, and salt. Whisk until well combined.

Crispy Parmesan

    Preheat oven to 400°F (200°C). Spread grated Parmesan in a thin layer on a parchment-lined baking sheet. Bake for about 5-7 minutes until golden and crispy. Let cool.

Assembly

    Plate the Dish

    Serve the triple-cooked potatoes topped with smoked tomato sauce, a drizzle of saffron aioli, and sprinkle with crispy Parmesan.
