Preparing the Cashew Cream

Soak the Cashews
Soak the raw cashews in water for at least 4 hours or overnight.

Blend the Cashew Cream
Drain and rinse the soaked cashews. In a blender, combine soaked cashews, 0.5 cup water, lemon juice, garlic powder, and salt. Blend until smooth and creamy. Adjust consistency with more water if needed.
Grilling the Maitake

Prepare the Maitake
Clean the maitake mushrooms gently with a damp cloth. Trim any tough stems.

Season the Mushrooms
Sprinkle the five-spice powder evenly over the maitake mushrooms and gently rub it in.

Coat with Almond Flour
Dredge the seasoned maitake mushrooms in almond flour to coat them lightly.
