Chicken Marinade

Marinate the Chicken
In a large bowl, combine buttermilk, salt, black pepper, paprika, and garlic powder. Add chicken thighs, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight.

Prepare Pickles
In a jar, combine sliced cucumbers, white vinegar, sugar, and salt. Shake well and let sit in the refrigerator for at least 1 hour.

Prepare and Fry Chicken
In a bowl, mix together flour, cornstarch, cayenne pepper, and a pinch of salt. Heat vegetable oil in a deep skillet over medium-high heat. Remove chicken from marinade, allowing excess buttermilk to drip off. Dredge each thigh in the flour mixture, shaking off excess. Fry in hot oil for 5-7 minutes per side, or until golden brown and cooked through. Drain on paper towels.

Make Spicy Aioli
In a small bowl, whisk together mayonnaise, sriracha, lemon juice, and minced garlic until smooth.

Assemble the Sandwich
Toast potato buns. Spread spicy aioli on the bottom bun, add fried chicken, top with house-made pickles, and finish with mixed greens. Place the top bun on and serve with French fries on the side.
