Meatballs Preparation

Mix Ingredients
In a large bowl, combine the ground duck meat, breadcrumbs, grated Parmesan cheese, egg, minced garlic, chopped parsley, salt, and black pepper. Mix until well incorporated.

Form Meatballs
Shape the mixture into small meatballs, about 2.5 cm in diameter.

Cook Meatballs
In a skillet over medium heat, add a little oil and cook the meatballs until browned and cooked through, about 10-12 minutes. Set aside.
Parmesan Foam Preparation

Heat Cream
In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.

Add Parmesan
Add the grated Parmesan cheese and stir until melted and smooth. Season with salt to taste. Remove from heat.

Blend Foam
Using an immersion blender, blend the mixture until it becomes frothy and light. Keep warm.
Tagliatelle Preparation

Boil Water
In a large pot, bring 2 liters of salted water to a boil.

Cook Tagliatelle
Add the tagliatelle and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
Assembly

Combine Ingredients
On a plate, serve a portion of tagliatelle topped with duck meatballs.

Add Foam
Drizzle the Parmesan foam over the top of the meatballs and tagliatelle. Serve immediately.
