    Prepare the Ingredients

    Start by preparing all your ingredients. Chop the onion, mince the garlic, and cut the lamb into chunks.

    Sauté the Aromatics

    In a large tagine or heavy pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sauté until the onion becomes translucent.

    Brown the Lamb

    Add the lamb chunks to the pot and brown on all sides. This should take about 5-7 minutes.

    Add Spices

    Stir in the ground cumin, ground cinnamon, ground ginger, and saffron. Cook for another 2 minutes until fragrant.

    Simmer the Tagine

    Pour in the chicken or vegetable broth, add the preserved lemons, chopped dried apricots, and chickpeas. Season with salt and black pepper to taste. Bring to a boil, then reduce heat to low, cover, and simmer for about 1.5 hours, or until the lamb is tender.

    Serve

    Serve the lamb tagine hot with your choice of rice and warm pita bread.
