    Prepare the Falafel

    Soak the dried chickpeas in water for 8 hours or overnight. Drain and rinse them.

    Blend Ingredients

    In a food processor, combine the soaked chickpeas, garlic, parsley, cumin, coriander, baking powder, and salt. Blend until a coarse mixture forms.

    Form the Falafel Balls

    Using your hands, form the mixture into small balls or patties.

    Fry the Falafel

    Heat the vegetable oil in a deep pan over medium heat. Fry the falafel balls in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.

    Prepare the EZ Salad

    In a bowl, combine lettuce, diced tomatoes, and diced cucumber. Toss with a drizzle of olive oil and a pinch of salt.

    Serve

    Warm the pita bread. Serve the falafel with hummus, EZ salad, pita, and tahini sauce on the side.
