    Prepare the Fish

    In a shallow bowl, combine the flour, cornmeal, salt, and black pepper. In another bowl, whisk together the egg and milk. Dip each fish fillet first in the egg mixture, then coat with the flour mixture.

    Fry the Fish

    In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the coated fish fillets and cook for about 3-4 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

    Sauté the Vegetables

    In the same skillet, add the sliced onion and sauté until translucent. Then, add the eggplant and cook until tender. Finally, add the sliced tomato and cook for another 2-3 minutes. Season with salt and pepper to taste.

    Make the Cilantro Sauce

    In a small bowl, combine the chopped cilantro, lemon juice, minced garlic, and a pinch of salt and pepper. Mix well.

    Assemble the Sandwich

    On the bottom half of each bun, place a bed of arugula, then add the crispy fish fillet. Top with sautéed vegetables and drizzle with the cilantro sauce. Finish with the top half of the bun.
