Prepare the Spinach

Wash the fresh spinach thoroughly, then blanch it in boiling water for 2-3 minutes. Drain and cool in ice water. Blend into a smooth puree.

Cook the Base

Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle. Add finely chopped onions and cook until golden brown.

Add Tomatoes and Spices

Add chopped tomatoes, ginger-garlic paste, turmeric powder, green chili, and salt. Cook until the tomatoes soften.

Combine Spinach and Paneer

Add the spinach puree to the pan and mix well. Cook for 5 minutes. Cut paneer into cubes and gently fold into the spinach mixture.

Finish with Garam Masala

Sprinkle garam masala over the dish and stir. Add water to adjust the consistency, if needed. Cook for another 2-3 minutes.

Serve

Serve hot with naan or rice.
