Prepare the Rice

Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes, then drain and set aside.

Cook the Protein

In a large pot, heat oil or ghee over medium heat. Add the sliced onions and sauté until golden brown. Add the ginger-garlic paste, chopped tomatoes, and cook until the tomatoes soften.

Add Spices and Yogurt

Stir in the biryani masala, turmeric powder, and salt. Add the protein (chicken, lamb, or mixed vegetables) and yogurt. Cook for about 10-15 minutes, until the protein is cooked through and well coated with spices.

Layer the Rice

In the same pot, layer the drained rice over the cooked protein. Sprinkle chopped cilantro and mint leaves on top. Pour in 4 cups of water. Bring to a boil, then reduce the heat to low.

Cook the Biryani

Cover the pot with a tight-fitting lid and cook on low heat for about 20-25 minutes. Turn off the heat and let it rest for an additional 10 minutes without lifting the lid.

Serve

Gently fluff the biryani with a fork and serve hot with raita or salad.
