Meat Preparation

Prepare the Meat
If using pork shoulder, season it generously with salt and pepper. If using chicken thighs, season them as well. Place the meat in a slow cooker.

Cook the Meat
Cook the meat on low for 8 hours or until tender. Once cooked, shred the meat with two forks and set aside.
BBQ Sauce Preparation

Make BBQ Sauce
In a medium saucepan, combine apple cider vinegar, ketchup, brown sugar, Worcestershire sauce, mustard powder, smoked paprika, salt, black pepper, and garlic powder. Stir well to combine.

Simmer the Sauce
Bring the sauce to a boil over medium heat, then reduce to a simmer for about 15 minutes, stirring occasionally. Adjust seasoning if needed.
Combine and Serve

Toast the Buns
Lightly toast the brioche buns on a skillet or in a toaster until golden brown.

Assemble the Sandwiches
Place a generous portion of the pulled pork or chicken on the bottom half of each brioche bun. Top with cheddar cheese.

Close the sandwiches with the top halves of the buns and serve immediately while warm.
