Cake Preparation

    Melt the Chocolate

    In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let it cool slightly.

    Mix Sugar and Eggs

    In a separate mixing bowl, whisk together the granulated sugar, whole eggs, egg yolks, and vanilla extract until the mixture is pale and thick.

    Combine Mixtures

    Gently fold the melted chocolate mixture into the egg mixture until well combined. Be careful not to deflate the eggs.

    Add Dry Ingredients

    Sift the all-purpose flour and salt over the chocolate mixture. Fold gently until just combined.

    Prepare the Ramekins

    Preheat the oven to 200°C (400°F). Grease four ramekins with butter and dust with flour to prevent sticking.

    Fill the Ramekins

    Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

    Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are set but the center is still soft.

    Let the cakes cool for 1 minute, then carefully invert each ramekin onto a plate. Dust with powdered sugar and serve with a scoop of vanilla ice cream.
