Make Lime Crème
In a small bowl, combine sour cream and lime juice. Mix well until smooth and creamy. Set aside.
Pico de Gallo Preparation

Prepare Pico de Gallo
Dice tomatoes and red onion finely. In a medium bowl, combine tomatoes, red onion, chopped cilantro, lime juice, and salt. Mix well and let it sit for at least 10 minutes to allow flavors to meld.

Assemble the Nachos
On a large baking sheet, spread tortilla chips evenly. Top with shredded meat, shredded cheddar cheese, and dollops of pico de gallo. Drizzle with salsa and sprinkle chopped fresh jalapeño over the top.

Bake the Nachos
Preheat your oven to 350°F (175°C). Place the assembled nachos in the oven and bake for 10-15 minutes, or until the cheese is melted and bubbly.
