Burger Preparation

    Prepare the Mushrooms

    Clean the portabella mushrooms with a damp cloth. Remove the stems and slice the caps into thick slices.

    Cook the Mushrooms

    Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced mushrooms, sprinkle with salt and black pepper, and sauté for about 5-7 minutes until they are tender and golden brown. Remove from heat and set aside.

    Form the Patties

    In a bowl, combine the ground chuck with salt and black pepper. Divide the mixture into two equal portions and shape them into burger patties.

    Cook the Patties

    In the same skillet used for the mushrooms, add the remaining olive oil. Increase the heat to medium-high and add the burger patties. Cook for about 4-5 minutes on each side for medium doneness. In the last minute of cooking, place a slice of Swiss cheese on each patty and cover the skillet to melt the cheese.

    Toast the Buns

    While the patties are cooking, slice the brioche buns in half. Toast them in a separate pan or under a broiler until golden brown.

    Assemble the Burgers

    On the bottom half of each toasted brioche bun, place a cooked burger patty with melted Swiss cheese. Top with sautéed portabella mushrooms, a handful of romaine lettuce, pickled red onions, and pickles. Place the top half of the bun on each burger.

    Prepare the Fries

    Cook the frozen fries according to the package instructions until crispy and golden brown.

    Serve the mushroom Swiss burgers hot alongside the crispy fries.
