Preparing the Pulled Pork or Pulled Chicken

Season the Meat
Rub the pork shoulder or chicken thighs with olive oil, salt, black pepper, smoked paprika, garlic powder, and onion powder. Ensure the meat is evenly coated.

Cook the Meat
Place the seasoned meat in a slow cooker. Pour the chicken or vegetable broth over the top. Cover and cook on low for 6-8 hours or until the meat is tender and easily shredded.

Shred the Meat
Once cooked, remove the meat from the slow cooker and shred it using two forks. Return the shredded meat to the cooker to soak up the juices.
Making the Apple Cider Mayo Slaw

Combine Slaw Ingredients
In a large bowl, combine shredded green cabbage and carrots.

Mix Dressing
In a separate bowl, mix together mayonnaise, apple cider vinegar, honey, salt, and black pepper until well combined.

Toss Slaw
Pour the dressing over the cabbage and carrot mixture. Toss until the vegetables are evenly coated. Refrigerate for at least 30 minutes before serving.
Preparing the Fries

Preheat Oven
Preheat oven to 425°F (220°C).

Prepare Fries
Toss the cut potatoes with olive oil, salt, and black pepper in a large bowl until well coated.

Bake the Fries
Spread the fries in a single layer on a baking sheet. Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.
Assembling the Sandwich

Layer the Sandwich
On the bottom half of each bun, layer shredded pulled pork or chicken, a slice of white cheddar cheese, crumbled bacon, and a generous drizzle of Carolina BBQ sauce. Top with a scoop of apple cider mayo slaw.

Serve
Place the top half of the bun on each sandwich. Serve the sandwiches with a side of crispy fries.
