Preparing the Meat

Cook the Meat
In a slow cooker, place the pork shoulder or chicken thighs. Season with salt, black pepper, paprika, garlic powder, and onion powder. Pour BBQ sauce over the meat. Cook on low for 8 hours or high for 4 hours until tender.

Shred the Meat
Once cooked, remove the meat from the slow cooker and shred it using two forks. Return the shredded meat to the slow cooker and mix with the remaining BBQ sauce.

Prepare the Fries
Preheat your oven as per the instructions on the frozen French fries package. Spread the fries on a baking sheet, drizzle with olive oil, and sprinkle with salt. Bake until golden and crispy, according to package instructions.
Assembling the Sandwich

Build the Sandwich
Toast the burger buns lightly on a pan or in the oven. Layer a generous amount of the pulled meat on the bottom half of the bun. Top with two slices of white cheddar cheese, then add a spoonful of pico de gallo, followed by red and green salsa. Place the top half of the bun on and press down gently.
