    Marinate the Mushrooms

    In a bowl, mix olive oil, salt, and black pepper. Add portabella mushrooms, ensuring they are well coated. Let them marinate for at least 15 minutes.

    Pickle the Cucumbers

    Thinly slice the cucumber. In a small bowl, combine with vinegar, salt, and a pinch of sugar. Let sit for at least 10 minutes to pickle.

Grilling

    Grill the Mushrooms

    Preheat the grill or grill pan over medium heat. Grill the marinated portabella mushrooms for about 5-7 minutes on each side or until tender and slightly charred.

Assembly

    Toast the Brioche Buns

    While the mushrooms are grilling, toast the brioche buns on the grill or in a toaster until golden brown.

    Assemble the Sandwich

    Spread olive tapenade on the bottom half of each toasted brioche bun. Place the grilled portabella mushroom on top, followed by pickled cucumbers, slices of fresh tomato, boursin cheese, and a sprinkle of feta cheese. Top with the other half of the bun.
