For the Pulled Pork

Prepare the Pulled Pork
In a slow cooker, combine the pork shoulder, chopped onion, minced garlic, apple cider vinegar, brown sugar, paprika, cayenne pepper, salt, and black pepper. Add water to the mixture.

Cook the Pork
Cover and cook on low for 8 hours or until the pork is tender and easily shredded.

Shred the Pork
Once cooked, remove the pork shoulder from the slow cooker and shred it using two forks. Return the shredded pork to the cooker and mix it with the juices.

Preheat the Oven
Preheat your oven to 425°F (220°C).

Prepare the Fries
In a large bowl, toss the cut potatoes with olive oil, salt, and black pepper until evenly coated.

Bake the Fries
Spread the fries in a single layer on a baking sheet. Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.

Cook the Bacon
In a skillet over medium heat, cook the bacon until crispy. Drain on paper towels.

Add Cheese
In the last minute of cooking, place a slice of white cheddar cheese on each patty and cover to melt.

Assemble the Burgers
On each burger bun, layer a cooked patty with pulled pork, crispy bacon, and a generous drizzle of Carolina BBQ sauce. Close with the top bun.
