Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thick strips, about 1/4 inch wide.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Drain and pat dry the soaked potatoes. Carefully add them to the hot oil in batches, frying until golden brown and crispy, about 5-7 minutes per batch.

Drain and Season
Remove the fries from the oil and drain on paper towels. Immediately sprinkle with salt and black pepper to taste.
Garlic Aioli

Prepare the Garlic
Mince the garlic cloves finely.

Mix the Aioli
In a bowl, combine mayonnaise, minced garlic, lemon juice, olive oil, and salt. Whisk together until smooth and well blended.

Chill
Cover the aioli and refrigerate for at least 30 minutes to allow the flavors to meld.
House Made Ketchup

Combine Ingredients
In a saucepan, combine tomato sauce, vinegar, brown sugar, onion powder, garlic powder, salt, and black pepper.

Cook the Ketchup
Cook over medium heat, stirring occasionally, until the mixture thickens slightly, about 15-20 minutes.

Cool and Store
Remove from heat and let it cool. Store in an airtight container in the refrigerator until ready to serve.
