Frites (Fries)

Method

Steak Preparation

  1. 1

    Season the Steak

Sprinkle salt and black pepper evenly on both sides of the ribeye steaks. Let them sit at room temperature for about 30 minutes.

  2. 2

    Heat the Pan

In a large skillet over medium-high heat, add olive oil and heat until shimmering.

  3. 3

    Cook the Steak

Add the seasoned steaks to the pan. Sear for 4-5 minutes on each side for medium-rare, adjusting time for desired doneness.

  4. 4

    Add Flavor

In the last minute of cooking, add butter, crushed garlic cloves, and rosemary to the pan. Baste the steaks with the melted butter.

  5. 5

    Rest the Steak

Remove the steaks from the pan and let them rest on a plate for 5-10 minutes before slicing.

Frites Preparation

  1. 6

    Prepare the Potatoes

Peel the russet potatoes and cut them into thin strips (about 1/4 inch thick).

  2. 7

    Soak the Potatoes

Place the cut potatoes in a bowl of cold water and soak for at least 30 minutes to remove excess starch.

  3. 8

    Heat the Oil

In a large deep pot, heat vegetable oil to 350°F (175°C).

  4. 9

    Fry the Potatoes

Drain the soaked potatoes and pat them dry with paper towels. Carefully add them to the hot oil in batches, frying for about 4-5 minutes until golden and crispy.

  5. 10

    Season the Frites

Remove the frites from the oil and drain on paper towels. Season with salt immediately while they are hot.
