Preparing the Chips

Prepare the Potatoes
Peel the russet potatoes and cut them into thick chips (about 1/2 inch wide).

Soak the Chips
Place the cut chips in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

Dry the Chips
Drain the water and pat the chips dry with a clean kitchen towel.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chips (First Fry)
Carefully add the chips in batches to the hot oil and fry for about 5-6 minutes until they are pale and soft but not colored. Remove and drain on paper towels.

Make the Batter
In a large bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold sparkling water until smooth and slightly thickened.

Heat the Oil
In a separate pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Batter the Fish
Dip each fish fillet into the batter, allowing excess to drip off.

Fry the Fish
Carefully place the battered fish into the hot oil and fry for about 5-7 minutes until golden brown, flipping halfway through. Remove and drain on paper towels.
Final Fry for Chips

Second Fry
Increase the heat of the oil to 375°F (190°C). Fry the chips again in batches for an additional 3-4 minutes until they are golden and crispy. Drain on paper towels and season with salt to taste.

Serve the crispy fish alongside the golden chips on a plate. Optionally, serve with malt vinegar, tartar sauce, or lemon wedges.
