For the Calamari

Prepare the Calamari
Rinse the calamari rings under cold water and pat them dry with paper towels.

Make the Coating
In a large bowl, mix together the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder.

Soak the Calamari
Pour the buttermilk into a separate bowl. Dip the calamari rings into the buttermilk, allowing any excess to drip off.

Coat the Calamari
Transfer the buttermilk-coated calamari into the flour mixture and toss until well coated. Shake off any excess flour.

Heat the Oil
In a deep frying pan, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

Fry the Calamari
Carefully add the coated calamari rings to the hot oil in batches. Fry for 2-3 minutes or until golden brown and crispy.

Drain the Calamari
Using a slotted spoon, remove the fried calamari from the oil and drain on paper towels. Season with additional salt if desired.
For the Spicy Aioli

Combine Ingredients
In a small bowl, mix together the mayonnaise, sriracha sauce, lemon juice, minced garlic, and salt.

Adjust Seasoning
Taste the aioli and adjust seasoning with additional salt or sriracha if you prefer more heat.
