Method
Crust Preparation
- 1
Preheat the Oven
Preheat your oven to 350°F (175°C). This will ensure the cheesecake bakes evenly.
- 2
Mix the Crust Ingredients
In a medium bowl, combine 1.5 cups of graham cracker crumbs, 0.5 cups of granulated sugar, and 0.75 cups of melted unsalted butter. Mix until the crumbs are fully saturated.
- 3
Form the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan to form an even layer. Make sure to pack it tightly.
- 4
Bake the Crust
Bake the crust in the preheated oven for about 10 minutes, or until lightly golden. Remove from the oven and let cool while preparing the filling.
Filling Preparation
- 5
Beat the Cream Cheese
In a large mixing bowl, beat 4 cups of cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.
- 6
Add Sugar and Sour Cream
Gradually add 1 cup of granulated sugar while continuing to beat. Once combined, add 1 cup of sour cream and 2 tsp of vanilla extract. Mix well until smooth.
- 7
Incorporate Eggs
Add the 4 large eggs one at a time, mixing on low speed after each addition just until incorporated. Be careful not to overmix.
- 8
Pour Filling into Crust
Pour the cheesecake filling over the cooled crust in the springform pan, smoothing the top with a spatula.
- 9
Bake the Cheesecake
Bake the cheesecake in the oven at 350°F (175°C) for 50-60 minutes, or until the edges are set but the center still slightly jiggles.
- 10
Cool and Chill
Turn off the oven and crack the door open, allowing the cheesecake to cool slowly for about 1 hour. Afterward, refrigerate for at least 4 hours, preferably overnight.
