Chop the Heirloom Tomatoes
Rinse the heirloom tomatoes under cold water. Pat them dry with a clean kitchen towel. Cut them into bite-sized pieces and place them in a medium bowl.

Prepare the Basil
Wash the fresh basil leaves thoroughly. Pat them dry with a paper towel. Tear or chop the basil leaves into smaller pieces and add to the bowl with tomatoes.

Dress the Salad
Drizzle the extra virgin olive oil and balsamic vinegar over the chopped tomatoes and basil. Add sea salt and freshly cracked black pepper to taste. Gently toss the mixture to combine, being careful not to crush the tomatoes.

Plate the Dish
On a serving platter, place the burrata cheese in the center. Spoon the marinated heirloom tomato and basil mixture around the burrata. Make sure to include some of the dressing from the bowl.

Serve
Serve immediately, allowing guests to break into the burrata and mix it with the tomatoes and basil. Enjoy as an appetizer or light main dish.
