Preparation of Beef Tartare

Prepare the Beef
Finely chop the beef tenderloin using a sharp knife. Make sure to cut it into very small pieces for the best texture.

Mix the Ingredients
In a mixing bowl, combine the chopped beef, capers, finely chopped shallots, Dijon mustard, Worcestershire sauce, olive oil, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

Taste the mixture and adjust seasoning if necessary. You can add more salt, pepper, or mustard to cater to your preference.

Prepare the Garnish
Chop the fresh parsley finely and set aside.

Place the beef tartare mixture in the center of a plate, forming it into a neat mound.

Carefully crack the quail eggs and place one yolk on top of the tartare mound. Repeat with the second egg.
