    Brine the Trout

    In a bowl, mix salt, brown sugar, and black pepper. Rub this mixture onto the trout fillets, ensuring they are well coated. Cover with plastic wrap and refrigerate for at least 4 hours, or overnight for best results.

    Prepare for Smoking

    After brining, rinse the trout fillets under cold water to remove excess salt and sugar. Pat them dry with paper towels. Brush the fillets with liquid smoke for added flavor.

    Soak Wood Chips

    Soak hickory wood chips in water for at least 30 minutes before smoking to prevent them from burning too quickly.

    Setup the Smoker

    Preheat your smoker to 200°F (93°C). Place the soaked hickory wood chips in the smoker box or directly on the coals.

    Smoke the Trout

    Place the trout fillets skin-side down on the smoker rack. Close the lid and smoke for about 1 to 1.5 hours, or until the trout reaches an internal temperature of 145°F (63°C).

    Rest and Serve

    Once done, remove the trout from the smoker and let it rest for about 10 minutes before serving. Enjoy smoked trout on its own or as part of a salad, sandwich, or appetizer platter.
