Preparing the Eggplant Schnitzel

    Prepare the Eggplant

    Slice the eggplant into 1/2 inch thick rounds. Sprinkle with salt and let them sit for 30 minutes to draw out moisture. Rinse and pat dry.

    Set up Breading Station

    Prepare three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with black pepper.

    Bread the Eggplant

    Dip each eggplant slice first in flour, then in the egg, and finally in breadcrumbs, ensuring an even coating.

    Fry the Eggplant

    Heat olive oil in a large skillet over medium heat. Fry the breaded eggplant slices for about 3-4 minutes on each side or until golden brown. Drain on paper towels.

    Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and set aside.
