Preparation of Schnitzel

    Prepare the Pork

    Slice the pork loin into thin cutlets, about 1/4 inch thick. Use a meat mallet to pound them gently to ensure even thickness.

    Set Up Breading Station

    In three shallow dishes, place the flour in one, beaten eggs in the second, and bread crumbs mixed with salt and pepper in the third.

    Bread the Cutlets

    Dredge each cutlet in flour, shaking off the excess. Dip into the beaten eggs, then coat with bread crumbs, pressing gently to adhere.

    Fry the Schnitzel

    In a large skillet, heat the vegetable oil over medium-high heat. Fry the breaded cutlets in batches until golden brown and cooked through, about 3-4 minutes per side. Drain on paper towels and squeeze fresh lemon juice on top.
