Preparing the Schnitzel

Prepare the Chicken
Pound the chicken breasts to about 1/2 inch thickness. Season with salt and pepper.

Breading Process
Set up a breading station: place flour in one bowl, beaten eggs in another, and breadcrumbs in a third. Dredge each chicken breast in flour, dip into eggs, and coat with breadcrumbs.

Fry the Schnitzel
In a large skillet, heat oil over medium-high heat. Fry each schnitzel for about 4-5 minutes on each side or until golden brown. Remove and drain on paper towels.

Combine Ingredients
In a bowl, whisk together mayonnaise, sour cream, buttermilk, blue cheese, garlic powder, onion powder, dried parsley, salt, and black pepper until well blended.

Cover and refrigerate for at least 30 minutes before serving.
Cooking the Sides

Prepare the Potatoes
Boil baby potatoes in salted water until tender, about 15-20 minutes. Drain and toss with butter, salt, and pepper.

In a separate pot, steam or boil green beans for about 5-7 minutes until bright green and tender-crisp. Season with salt and pepper.
