    Prepare the Salad

    In a large bowl, combine the endive, diced apple, and chopped walnuts. Toss gently to mix the ingredients.

    Make the Blue Cheese Dressing

    If using store-bought, pour the blue cheese dressing over the salad mixture. If making homemade, combine crumbled blue cheese, mayonnaise, sour cream, lemon juice, salt, and pepper in a bowl and mix until well combined.

    Poach the Eggs

    Fill a saucepan with water and bring to a gentle simmer. Crack each egg into a small bowl, then gently slide them into the simmering water. Poach the eggs for about 3-4 minutes until the whites are set but the yolks are still runny. Remove with a slotted spoon and drain on paper towels.

    Assemble the Salad

    Divide the salad mixture onto plates. Drizzle with blue cheese dressing and top each serving with a poached egg.
