    Prepare the Schnitzel

    Heat oil in a frying pan over medium heat. Season the pork schnitzel with salt and pepper, then fry for about 4-5 minutes on each side until golden brown and cooked through. Remove and set aside.

    Fry the Eggs

    In the same pan, crack the eggs and cook to your desired doneness (sunny side up, over easy, etc.). Season with salt and pepper.

    Assemble the Sandwich

    Spread garlic mayo on the bottom half of each brioche bun. Layer with the fried schnitzel, fried egg, pickles, and mixed greens. Top with the other half of the bun.

    Cut the sandwich in half if desired and serve immediately with a side of additional pickles or greens.
