    Prepare the Cabbage

    Remove the outer leaves of the cabbage and set them aside. Cut the cabbage into quarters, remove the core, and slice it thinly.

    Mix Ingredients

    In a large bowl, combine the sliced cabbage, sea salt, caraway seeds, and minced garlic. Mix thoroughly, massaging the cabbage with your hands for about 5-10 minutes until it begins to release its juices.

    Pack the Jar

    Transfer the cabbage mixture into a clean glass jar, pressing it down firmly to eliminate air pockets. Leave about 1-2 inches of headspace at the top.

    Add Brine

    If the cabbage is not submerged in its own juices, mix the water with a little more salt (1 teaspoon) and pour it into the jar until the cabbage is fully submerged.

    Cover and Ferment

    Place the reserved outer cabbage leaves on top of the packed cabbage to keep it submerged. Seal the jar with a lid or cover it with a cloth. Leave it to ferment at room temperature for 1-4 weeks, tasting periodically until it reaches your desired tanginess.

    Store

    Once fermented, store the sauerkraut in the refrigerator, where it will keep for several months.
