    Wash and peel the russet potatoes. Grate them using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and wring out the excess moisture.

    In a large bowl, combine the grated potatoes with salt and black pepper. Mix well to evenly distribute the seasoning.

    Cook the Rösti

    In a large skillet, heat half of the butter over medium heat. Once melted, add the potato mixture, pressing it down into an even layer. Cook for about 10-15 minutes until the bottom is golden brown.

    Flip the Rösti

    Carefully flip the rösti using a large plate or spatula. Add the remaining butter to the skillet and slide the flipped rösti back into the pan. Cook for another 10-15 minutes until the other side is golden brown.
