Prepare Spaetzle

Make the Spaetzle Dough
In a large bowl, mix the flour and salt. In another bowl, whisk together the eggs and milk. Gradually combine the wet ingredients with the dry ingredients until a smooth batter forms.

Cook the Spaetzle
Bring a large pot of salted water to a boil. Using a spaetzle maker or a colander, drop the dough into the boiling water. Cook until the spaetzle float to the surface, about 2-3 minutes. Remove with a slotted spoon and set aside.
Fry the Mixture

Sauté Ingredients
In a large skillet, melt the butter over medium heat. Add the diced smoked ham and sauté for about 3-4 minutes until warmed through.

Add Spaetzle and Peas
Add the cooked spaetzle and frozen peas to the skillet. Pour in the soy sauce and stir everything together. Cook for an additional 5-7 minutes, allowing the spaetzle to get slightly crispy.

Add Green Onions
Stir in the chopped green onions and cook for another 1-2 minutes until everything is heated through.
Cook Sunny Eggs

Fry the Eggs
In a separate non-stick skillet, heat the oil or butter over medium heat. Crack the eggs into the skillet and cook until the whites are set and the yolks are still runny, about 3-4 minutes.
Serve

Plate the Dish
Divide the fried spaetzle mixture among plates and top each serving with a sunny-side-up egg. Serve immediately.
