    Harvesting and Preparing Grapes

    Harvest ripe Merlot grapes and remove stems. Crush the grapes to release their juice and pulp.

    Creating the Must

    In a fermentation vessel, combine crushed grapes, water, and sugar. Stir until the sugar is dissolved.

    Adding Yeast

    Sprinkle yeast over the mixture and stir gently to combine. Cover the vessel with a clean cloth.

    Fermentation

    Let the mixture ferment at room temperature for about 7-10 days, stirring daily. Check for bubbling, which indicates fermentation.

    Pressing the Must

    After fermentation, press the mixture to separate the liquid from the solids. Use a fine mesh strainer or cheesecloth.

    Aging the Wine

    Transfer the liquid to a glass carboy or barrel. If desired, add oak chips for extra flavor. Seal and let age for at least 6 months.
