Prepare the Jägerschnitzel

Pound the Meat
Using a meat mallet, pound the pork or veal cutlets to about 1/4 inch thickness.

Bread the Cutlets
Set up a breading station with flour, beaten eggs, and bread crumbs. Dredge each cutlet in flour, dip in egg, and coat in bread crumbs.

Fry the Cutlets
In a large skillet, heat oil over medium-high heat. Fry the breaded cutlets until golden brown, about 3-4 minutes on each side. Drain on paper towels.

Make the Gravy
Pour in the broth and bring to a simmer. Stir in the cream and soy sauce, and season with salt and pepper. Cook for an additional 5 minutes until thickened.
Prepare the Poached Eggs

Boil the Water
In a medium saucepan, bring water and vinegar to a gentle simmer.

Crack each egg into a small bowl, then gently slide into the simmering water. Cook for 3-4 minutes until whites are set but yolks remain runny. Remove with a slotted spoon.
