Preparing the Schnitzel

Prepare the Pork
Slice the pork loin into 4 equal pieces. Gently pound each piece between two sheets of plastic wrap until they are about 1/4 inch thick.

Bread the Schnitzel
Set up a breading station with three shallow dishes: one with flour seasoned with salt and pepper, one with beaten eggs, and one with bread crumbs. Dredge each piece of pork first in flour, then dip in the egg, and finally coat with bread crumbs.

Cook the Schnitzel
In a large skillet, heat butter and olive oil over medium heat. Fry the breaded schnitzels for about 3-4 minutes on each side until golden brown and cooked through.

Add Ham and Cheese
Once the schnitzels are cooked, place 1 slice of ham and 1 slice of Emmental cheese on top of each schnitzel. Cover the skillet for 1-2 minutes to melt the cheese.

Cook Green Beans
In a pot of boiling water, blanch the green beans for 3-4 minutes until bright green and tender. Drain and season with salt and pepper.
