Prepare the Meat Mixture
In a large bowl, combine the ground elk meat and pork fatback. Mix well to ensure the fat is evenly distributed.

Add salt, black pepper, garlic powder, coriander, crushed red pepper flakes, sugar, and Cure #1 to the meat mixture. Mix thoroughly until all ingredients are well incorporated.

Incorporate Ice Water
Slowly add the ice water to the meat mixture, mixing until the mixture is sticky and well combined.

Stuff the Casings
Soak the natural hog casings in water for about 30 minutes. Rinse them thoroughly, then carefully stuff the meat mixture into the casings, being careful to avoid air pockets.

Tie the Salami
Once stuffed, tie the ends of the casings with kitchen twine, and poke small holes in the salami to allow air to escape.

Drying Process
Hang the salami in a cool, dark, and well-ventilated area with a temperature of 50-60°F (10-15°C) and humidity of around 70%. Let it dry for 2-4 weeks until hard.
