Brewing Process

Mashing
In a large brew kettle, heat 12 cups of water to about 160°F (70°C). Add 5 cups of Pilsner malt and maintain the temperature for about 60 minutes, stirring occasionally.

Lautering
After mashing, pour the mixture through a strainer to separate the liquid wort from the grain. Rinse the grains with additional hot water to get maximum efficiency.

Boiling
Bring the wort to a boil and add 1 tablespoon of Saaz hops. Boil for 60 minutes, adding additional hops if desired for more bitterness.

Cooling
After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

Fermentation
Transfer the cooled wort to a fermenter, pitch the lager yeast, and seal it with an airlock. Allow it to ferment in a cool place for about 1-2 weeks.

Conditioning
Let the beer condition for another 1-2 weeks at room temperature before refrigerating for at least 24 hours before serving.
