Prepare the Meat
In a large bowl, combine the pork shoulder, beef brisket, and pork fatback. Grind the meats together using a meat grinder fitted with a coarse plate.

In a separate bowl, mix together the minced garlic, black pepper, coriander, salt, and cayenne pepper. Add this spice mixture to the ground meat and mix thoroughly.

Slowly pour in the beer while mixing the meat until all ingredients are well combined. The mixture should be moist but not overly wet.

Rinse the hog casings under cold water and soak them in water for about 30 minutes. Rinse again before using.

Using a sausage stuffer, stuff the meat mixture into the prepared hog casings. Tie off the ends securely.

Poach the stuffed sausages in simmering water for about 30 minutes or until they reach an internal temperature of 160°F (71°C).
