Preparing Roesti

    Cook the Potatoes

    In a mixing bowl, combine the grated potatoes with salt and pepper. Heat olive oil in a skillet over medium heat. Add the potato mixture and press down to form a flat layer. Cook until golden brown, about 5-7 minutes on each side. Remove from the skillet and keep warm.

Baking Eggs

    Prepare the Egg Mixture

    Preheat the oven to 375°F (190°C). In a skillet, sauté the chopped Swiss chard in a little olive oil until wilted. In a baking dish, layer the sautéed Swiss chard and sprinkle shredded Gruyere cheese on top.

    Bake the Eggs

    Crack the eggs over the Swiss chard and cheese mixture. Season with salt and pepper. Bake in the preheated oven for about 10-15 minutes, or until the eggs are set to your desired doneness.

Preparing Greens and Toast

    In a bowl, whisk together olive oil, lemon juice, salt, and pepper. Add the mixed greens and toss to coat.

    Toast the brioche slices until golden brown. Serve alongside the baked eggs and roesti.
