Prepare mushrooms

If serving hot: heat a small skillet over medium heat. Add 1 tsp olive oil. When shimmering, add 1/2 cup sliced mushrooms, sprinkle with 1/8 tsp salt and a pinch (1/16 tsp) black pepper. Sauté, stirring occasionally, until mushrooms are golden and any released liquid has mostly evaporated, about 4–6 minutes. Remove from heat and set aside. If serving cold: use raw sliced mushrooms and skip sautéing.

Toast roll (optional)

Split the hoagie roll lengthwise, leaving a hinge if desired. For a hot sandwich, place the roll cut-side up under a broiler or in a toaster oven for 1–2 minutes until lightly toasted. For cold serving, leave the roll untoasted.

Assemble sandwich

Spread 1 tsp mustard evenly on one cut side of the roll. On the other half, place 2 slices provolone. If serving hot and you prefer melted cheese, place the assembled open sandwich briefly (1–2 minutes) under a broiler or in a toaster oven until cheese just begins to melt.

Add vegetables

Layer the mushrooms (hot or raw) over the cheese, then add 3 slices tomato, 2 sliced pepperoncini (remove seeds for less heat if desired), and 1/2 cup torn lettuce.

Dress and finish

Drizzle 1 tablespoon Italian dressing evenly over the vegetables. Close the sandwich and press gently to compact. Slice in half if desired and serve immediately.
