Method
Grilled Chicken
Prepare and pound
Pat the chicken breasts dry. If breasts are thick, slice horizontally or pound to an even thickness about 1/2 inch so they cook evenly.
Season
In a small bowl combine 2 tbs olive oil, garlic powder, dried oregano, salt and black pepper. Rub the mixture evenly over both sides of the chicken breasts.
Dressing
Use or make dressing
If using store-bought Caesar dressing, measure 3/4 cup and set aside. To make a quick homemade version: whisk together 3/4 cup mayonnaise (or a combination of mayo and Greek yogurt), 1 tsp Dijon mustard, 1/2 tsp Worcestershire sauce, 1/2 tsp anchovy paste (optional), 1-2 tbs lemon juice, and salt & pepper to taste. Adjust consistency with a teaspoon or two of water if too thick.
Assemble Wraps
Prepare lettuce and tortillas
Chop romaine into bite-sized pieces and pat dry. Warm tortillas briefly in a dry skillet 10-20 seconds per side or microwave 15 seconds to make them pliable. If desired, lightly butter the skillet and toast each tortilla 20-30 seconds per side for a slightly crisp exterior.
Dress the lettuce
Place the chopped romaine in a bowl and toss with about half to two-thirds of the Caesar dressing (about 1/2 cup) until evenly coated. Reserve remaining dressing for adding into the wrap or serving.
Layer ingredients
Lay a warmed tortilla flat. In the center, place about 1 cup of dressed romaine, 3-4 slices of the grilled chicken, and sprinkle about 3 tablespoons (approximately 0.1875 cup) of grated Parmesan. Add a squeeze of lemon if using and a light crack of black pepper. Drizzle a little of the reserved dressing if you want extra sauciness.
Wrap
Fold the bottom edge up over the filling, fold the sides in, and roll tightly to form a secure wrap. Repeat for remaining tortillas and filling.
Finish and serve
Slice each wrap in half on the diagonal. Serve immediately with extra Parmesan and remaining Caesar dressing on the side for dipping.
