Heat a large heavy skillet or griddle over high heat until shimmering. Add 1 tablespoon vegetable oil and swirl. Working in a single layer (do not overcrowd), sear the beef slices in batches for 45–60 seconds per side until just browned. Remove each batch to a plate and keep warm. Reserve any fond in the pan for flavor.
Onions & Peppers
Lower heat to medium-high. In the same pan, add 1 tablespoon butter and 1 tablespoon olive oil. Add the thinly sliced onions and peppers and 1/2 tsp kosher salt. Cook, stirring occasionally, until the onions are soft and beginning to caramelize and the peppers are tender, about 6–8 minutes. Add the thinly sliced hot pepper or jalapeño during the last 2 minutes if using.
Seasoning & Sauce
Return the seared beef to the pan with the vegetables. Add 1 tablespoon Worcestershire sauce and 1 teaspoon soy sauce, and 1/4 tsp black pepper. Toss and stir over medium-high heat for 1–2 minutes so the sauce coats the meat and vegetables and reduces slightly. Taste and adjust salt or heat (add more jalapeño slices if desired).
Assembly
Serve hot. Optionally garnish with extra sliced hot pepper or a pinch of freshly ground black pepper.
